When it comes to holidays and family gatherings, my FAVORITE thing to bring is always dessert. While I do love to cook and come up with healthy meals for my family to eat, sometimes you gotta switch it up and make a not-so-healthy dish that everyone will love. Well, this is the one!

Usually I am a chocolate dessert girl, but this family favorite patriotic fruit pizza has stolen my heart! I made this probably 4 times over the 4th of July weekend when we were going to many parties and let me tell you, it was a hit each time!

So- if you are on somewhat of a time crunch and need a super easy dessert that is sure to be a hit, follow this recipe. You won’t be disappointed!

Ingredients

  • Toss away 9×13 aluminum dish with a lid
  • Olive oil cooking spray
  • 2 16oz pre packaged sugar cookie rolls
  • 1 8oz block of cream cheese
  • 2 cups powdered sugar
  • 2 tsp vanilla extract
  • mix of red and blue berries (strawberries, blueberries, rasberries and blackberries)
  • Block of white chocolate for baking

That is all you need to create this super simple, family favorite dessert and it takes no time at all! My 2 year old even helped me with smoothing out the cookie (and eating most of the ingredients.)

Sometimes with him being a helper makes the process of preparing a dish a lot longer but not this one! It was perfect for his little hands to help me smooth out the dough and put the berries on top. He also LOVES to tell everyone what he did while we enjoy this dessert with our family and friends. Why not make a little one feel accomplished!

Instructions

  • Preheat your oven. I went by whatever what said on the package of cookie dough which was 375 degrees.
  • Spray your throw away pan with olive oil spray. I use olive oil for EVERYTHING. I am not a big fan of seed oils or canola and vegetable oils (I’m sure I’ll share more on that on another post)
  • Use one and a half of the rolls of premade cookie dough to evenly spread out on the bottom of the pan. This is the part that kept my toddler helping and happy. It’s fun to get messy! I saved 1/2 of the second roll and made sugar cookies after. I just found using the whole two rolls made the cookie too thick for this pan and it did not cook evenly.
  • Once the cookie is all spread out evenly, pop it in the oven for about 15 mins. This will be a little different for everybody since all ovens seem to cook and bake at different speeds. For me, after playing around with it for a few times- 15 mins was perfect. You want the edges of the cookie to be slightly brown but NOT overdone. I found if you leave the cookie barely done in the middle that is the best for keeping it chewy and moist.
  • Let the cookie COMPLETELY cool, when adding icing you don’t want it to melt on a hot cookie.
  • While the cookie is cooling, mix up your icing and cut your fruit

For the Icing

  • In a large bowl, add the whole block of cream cheese (slightly softened), powdered sugar, and vanilla extract and use an electric mixer to blend until smooth
  • TIP- I like to put the mixture into the fridge for about 20 mins before adding it to the cookie. This helps it not be too runny and easier to spread.
  • Use an icing knife or spatula to spread the icing mixture evenly over the whole cookie
  • Place the fruit in whatever design you want on top
  • Melt the white chocolate bar in microwave for 45 seconds to 1 minute until liquid, drizzle over the top of the cookie and pop in the fridge to save until it is time to serve!

And there you have it! A super easy, family favorite patriotic dessert for all your American occasions! This is perfect for Memorial day, 4th of July, Labor Day or just a fun summer treat. Don’t forget to let your toddler lick the spoon when all is said and done!
